Objective—Cooking and baking equipment (2009 FDA Food Code 4-602.12).
(1) The
food-contact surfaces of cooking and baking
equipment must be cleaned at least every twenty-four hours. This section does not apply to hot oil cooking and filtering
equipment if it is cleaned as specified under WAC
246-215-04605 (4)(f).
(2) The cavities and door seals of microwave ovens must be cleaned at least every twenty-four hours by using the manufacturer's recommended cleaning procedure.
