If the
regulatory authority grants a
variance as specified under WAC
246-215-08110, or a
haccp plan is otherwise required as specified under WAC
246-215-08210, the
permit holder shall:
(1) Maintain the approved variance at the food establishment; and
(2) Comply with the
haccp plans and procedures that are submitted as specified under WAC
246-215-08215 and
approved as a basis for the modification or waiver; and
(3) Maintain and provide to the
regulatory authority, upon request, records specified under WAC
246-215-08215 (4) and (5) that demonstrate that the following are routinely employed:
(a) Procedures for monitoring critical control points;
(b) Monitoring of the critical control points;
(c) Verification of the effectiveness of the operation or process; and
(d) Necessary corrective actions if there is a failure at a critical control point.
